You cook the steak in the oven first at a very low temp (250 for about 30 min). Take it out then sear at a high temp on a grill or stainless steel pan. The low temp cook gets the right amount of doneness for medium rare, and then the sear creates a really good crust on the steak. I kept the seasoning simple with kosher salt and toasted ground black pepper. Then finish with either flaky sea salt, some compound butter, or a chimichurri.
Read this on the reverse sear method. It’s good for thicker cuts (~2 inches) that need an even cook without risking over cooking.
