Yeah I've delayed twice before, it's not a big deal.
I also, after moving my jury duty back, had to go while freelancing because I couldn't push it any more times. I worked from the waiting room that day and then let the lawyers know I couldn't be chosen due to my freelance work when I got called to meet with them.
So at best, you might miss one day, assuming you've already pushed this back before.
Most jurisdictions provide the ability to postpone jury duty because of hardship. In many states, employers are prohibited from harassing, threatening, or coercing employees who are summoned for jury duty.
In the case for freelancers, joining a cooperative is always helpful when you need to depend on a network to cover you absences. What line of work are you in?
Just toss the mail out and act like you never received it. It’s not certified mail, so they don’t know if you receive it or not. Or just postpone it. Don’t miss a pay check for your civic duty—there are many other people capable of stepping in.

What state are you in? In NY you can postpone once online or by phone but you have to do it in advance. Your state may have something similar:

Just be straightforward with the company. Let them know you’ll do your best to sort it out seamlessly.

Likely they will line up a replacement then say the role was solved internally. I say OP should just postpone jury duty.
You can only wait and go to the jury selection. No need to tell your new gig boss that you've been called up. Like you said, it may not go any further than the selection date. If you are selected, of course you'll have to tell your boss then, but he is required to let you sit on a jury you were selected for. If he fires you over it, he's a jerk. Maybe talk to an employment lawyer ahead of time and ask those questions. Can you be fired if you're selected for jury duty? If you are fired, what options do you have to fight for your job.
It is a legal responsibility to go serve and your employer must by law respect that so be transparent. You must have a contract with them? If not sequestered Is there work you can catch up on after hours if you really want/need the work. Give them some positives to look forward to.
Don’t share with your gig yet. Cross that bridge only when you have to. Tell the jury selectors that you just got a gig after being out of work for a long time.
