The best uses of the wire whip are meringues and creams. Things that need to be whipped for 20+ minutes that you’d never bother making with a handheld.

Honestly I found the attachments to be inadequate. The mixer itself is great but for the cost of the attachments you're better off going with a purpose built appliance in stead since you get better functionality. It's literally cheaper to get a meat grinder with sausage stuffer, a food processor and a pasta crank versus those kitchenaid parts.
Mayonnaise is great in the mixer, as are toum, hummus, baba. Truthfully, you're getting the most out of it with sauces and baked goods.
If you do get an attachment, I recommend the ice cream maker!
Mashed potatoes — hard to do by hand, so easy in the kitchenaid. Also easy to do donuts/custards and desserts of any kind, but sounds like you’ve already done plenty of that!

I use it to pull baked chicken vs doing it by hand.
