Honestly, those noncompetes cannot really be enforced. Almost every state is at will employment and nothing can stop you from going to a competitor. I believe those noncompetes are just there to ensure you are not giving proprietary information away to competitors. But also, most employees don’t work at a high enough level to have access to that kind of proprietary information. I’ve seen people sign these “noncompetes” and then go work for competitors. You have nothing to worry about.

It depends. It varies from industry to industry and job to job. I would suggest that if you are asked to sign such a document, you have a lawyer look at it so that they can determine what your options are if you choose to leave. Without reading the contract, it’s hard for me to properly advise on a specific situation. But definitely invest in getting the legal advice.
Anywhere else to look for advice? I can’t afford what the employment attorneys want to charge.
