My favorite twist on this is to grill a top sirloin over charcoal and eat some of it right away. The leftovers I'll use for a steak sandwich, and I'll slice it into strips just to warm it up in the oven, or on a griddle if I feel like it. So in that case the meat isn't chopped up, it's just in strips. On a roll with provolone and onion, can't beat it. Still has the charcoal flavor.
Nothing beats the charcoal flavor!!
I usually do chopped beef in my cheese steak sandwiches! I used to always make them once a week, so this post has reminded me to break out that recipe again!

OOOH I love a good cheese steak sandwich. Not going to lie OP I have not made one of these in quite some time and this made me want to add it to my upcoming menu. For me I prefer my beef to be chopped up and I like the bread pretty toasted.
