I kind of think it depends. Some companies are a lot more supportive of their people regardless of "the customer always being right." Others will sell their people out for a dollar. It's all about management.
I think it is, at long, long last. Social media is terrible for a ton of reasons, but one thing it's been useful for is calling out and shaming terrible behavior. Think of all the "Karen loses it" videos you've seen in the past year. The comments almost all condemn the person for acting like a clown in public. I think this cultural change has given restaurants more of a spine - they're seeing that you don't have to grovel for outrageous customers, which is a win for us all.
