Yeah that cancels your return
You had an emergency that kept you in Paris just long enough to let you board there on the originally planned return date? Airlines won't buy it - this is such a common tactic that they have a name for it (skiplagging) and policies against it.
It’s prohibited by airlines, and on some of their websites it even states that you can face more consequences in the future, if you try to book with them again, after deliberately leaving during a layover.
Additionally, if you have checked in bags, they would go all the way to Nice, so keep that in mind.
Why do airlines hate this so much?

Was your original intention to go to Nice or was it just cheaper than to Paris? Either way hidden city ticketing is explicitly prohibited by all airlines' contract of carriage (though not illegal) and airlines can send you a cease and desist, sue to recoup the cost, cancel (and refund) all your remaining bookings, close your frequent flyer account (you forfeit all miles), and/or ban you from the airline. Even top tier elites don't get away with this.
And yes, missing any segment will lead to cancellation of any remaining segments.
And no, you can't just cancel any segment as you wish. If you change any routing/fare class/dates, the ticket is most likely subject to repricing using the current fare (i.e. expect a fare difference and change fee).

Former airline employee. Answers here are correct. I will still occasionally do this on a one way or the return, when there are no remaining flights I actually want, but strongly advise against making a habit of it. You may sometimes be unable to avoid having your bag checked through to your final ticketed destination too. It’s not about inconvenience to the airline, it’s about revenue. E.g., AA is the only airline flying non-stop from Rome to Charlotte. Business travelers in particular will pay a premium for non-stop flights. But there are loads of one-stop options on different airlines from Rome to Miami. AA needs passengers flying routes like that to fill aircraft, but they’re not going to sell many seats if they price higher than the competition, so they’ll often sell Rome to Miami via Charlotte for a lot less than they’ll sell Rome to Charlotte. It makes a lot of sense, even if it seems odd
