If you are on track towards your GC, I'd stay in the US with EY. Toronto is an expensive city, and CAD worth much less than USD. You will have better job opportunities when you have your GC in hand. I would look at it long term.

Depends on you, what matters more for you, peace of mind vs short term $$, in long term you can always go back to US(any day)
No, finding a job as a Canadian citizen is harder because you have to apply for the H1B sponsorship again or get a temporary work visa called TN. If you’re already on your way to get the GC I would stay in the US. Better salaries and opportunities than Canada!

I made a very similar move to another company in Toronto at a very similar pay last year. I too have a PD of 2019. For me it’s been worth it. The peace of mind is highly undervalued.
Yes, the COL is high in Toronto, but if you are ok with renting for a few years, then rents are still pretty low and with 160k you should be able to build a good nest in a few years. Also, if you live in downtown, you won’t need a car, so that’s some money saved there. Also given that you will be at a consulting firm I am pretty sure you would be WFH/travel. So, you could also look at a house 1-1.5 hours drive from downtown which would be relatively cheaper.
Also, Remember most healthcare is free, so that potential major expense in the US is a not of concern here.
Lastly, the main challenge newcomers to Canada have is finding that first job. Given that you already have one in hand, you are past that critical barrier. Finding your next job will for sure be easy as your Canadian work experience will be taken in to consideration and you won’t be lowballed like most or be needed to take a lower position than what you are qualified for. I too came with a job in hand and the move and settling in has been smooth.
