Give him things that don't matter if they're done last minute like lighting or chair rentals. Not Catering, not outfit, not venue planning, not the cake, etc.

As someone who recently dealt with this and whose fiance was actually very involved, I’m so sorry! It was so so stressful. For him to get very involved, I had to have a breakdown and start crying (I wish I was joking).

You need to better define help with the process. You don't have to give him the whole task. Let him help decide. You also don't have to give him time sensitive tasks, or ones that are two broad.
1. I have found these two caterers, here are the prices and menues, what do you think. If we can do tasting, when ate you available.
2. Finding shuttle options ( if you need or might want them to see costs)
3. Pick a tux rental place, set up account and notified groomsmen.
4. Give list of hotels nearby to research hotel blocks. ( his work may even give him an in to some chains) You don't need to provide that info until you send invitations, but don't tell him that.
