Emirates is decent even in economy. Personally, I don’t think I would overpay for premium economy over standard economy, but their business is definitely worth it
I’ve used other airlines premium economy from US west coast to Europe. It’s similar to a domestic first class seat and I’ve thought it’s worth it. However, I also see reports that Emirates PE is the most expensive in the world. Not knowing how much it is, it is hard to say if it’s worth it.
It’s not going to be a bed. But if you’re tall/large the extra space can make a huge difference on these long flights. You may not get much extra sleep like you would in business but it will be a lot more pleasant. Hard to say if it’s worth it though without knowing price difference

Will echo what others have said. I’ve flown PE to Europe multiple times. It’ll be comparable to a domestic business class seat. I can justify it with a good points deal but wouldn’t splurge on it.
I think it depends. If it's a red-eye on a weekend, then yes. I think those flights tend to be full, and there's nothing worse than trying to sleep with someone right next to you.
If it's midweek, then I think those flights tend to be emptier. I just flew back from Dubai last Thursday and the flight was one third full. The gate agent talked me out of the upgrade to premium economy and just said he'd give me my own row. He did.
If it's not a red-eye, then it's up to you as to whether you want to spend the money for the extra room. It might be easier to work, etc.
