I’ll second national parks with kids that age if you like hiking and the outdoors. I’ve been to a couple in the South East and have had a good time every time.

Costa Rica. Just visited over holidays, kids same age. Perfect for them — zip-lining, cloud and rainforests, beaches, Arenal volcano. Very safe. Roads are easy. And wont break bank.
Not a ton of points oriented hotels (Marriott/Hilton) that are close to action, those are great for parents getaway. But many awesome/great places around Manuel Antonio national park and Arenal Park for whole family. See TripAdvisor recs. There is a nice Marriott resort 90min drive from San Jose near town of Jaco and short drive to Manuel.
My kids are also 8 and 5. Before everything shutdown, I was thinking of researching/planning a trip to San Diego, but we live on the east coast and haven’t made it happen yet. But I was thinking it would be fun - beaches, the zoo, legoland, sea world, etc.
Aruba was our go to. Marriott time share, you can get through a travel agent if not an owner. Easy, great beaches and pools, great dining - if you want, and several activities to book when not at the beach/pool. We did it several times when our kids were that age.
Agree on the Aruba Marriott Timeshares and that lazy river! Very family friendly and reasonably priced.

Marco Island or Sanibel Island - southwest Florida. The kids always loved these places.
It’s great that you can get away for spring break. I guess with WFH it doesn’t really matter anyway.
Excellent. I always did that. Have computer and cell phone, you can be anywhere. I retired at 60 as a partner in June ‘21, so I don’t have to worry about that any longer 😂.
San Diego was great with kids that age. Myrtle beach is fun too (I know it has a bad rap, but the hotels have nice amenities for the kids and they love the board walk).
I second Myrtle Beach! We went a ton when the kids were little. North Myrtle is nicer. Myrtle Beach proper is a ton of strip malls and low rise hotels - prob where the bad rap comes from.
