I am from Engineering team who has developed the MuleSoft product and believe me our whole team is getting poached by Kong, I think it will the market leader going forward.

I believe if Kong makes transition from Mule to their technology seamless and easy, only then they pose a threat.
Otherwise with transitionining difficulties and cost , the existing customers wouldn't move

While the number of people have definitely increased, there still is demand.
Obviously, MuleSoft would fall under category of niche job if not super niche. Hence demand is always going to be comparatively lesser.
While, there isn't any certainty especially in technical field. It looks like it's going to be around at least till next 4-5 years.
It's better to learn other integration tools like Dell Boomi/Tibco/WSO2/Workato/Snaplogic/IICS/IBM App Connect.
My recommendations from above tools would be :
Dell Boomi
Tibco (Cloud version)
IICS (Informatica Intelligent Cloud Services)
These are my 2 cents!
As of now, doesn't look so, it's not prominently used when compared with others.
However, cannot predict things like these, one day some big company will adopt a technology and then others will follow like sheep irrespective of whether they need it or not.
