I had interviewed for an internship position at EY for technology consultant program for summer 2022 and got a call where they extended an offer. I wanted to know if I can defer the internship offer to fall 2022 or a later start date after summer.

Bro, Ive been applying to grad jobs for the last 12 months only just got an offer today, as someone who also wants a network engineer role just applying to any grad job (preferably SWE,SRE,SYSDEV but honestly anything in this job market) and in the mean time look up a CCNA course and get your certification (if you have a degree in EE it should only take a month to learn), once you are certified, keep applying for roles and you'll surely get an interview, for CV stuff a few network automation projects (just look up YouTube or even ChatGPT for ideas) and link them on GitHub. I can guarantee you if you do this next year once roles open in AWS or Meta you'll get an interview. It's a long road honestly and at times it will feel like you want to quit but you only fail when you stop applying. 3 years from now if you stay committed I guarantee you will be a network engineer the path is just not as straightforward as you think, it never is really. I'm sorry but there isn't really a good explanation other than: there just aren't many actual vacancies right now. The only advice I can offer is that you should avoid applying to job posting that don't mention a specific deadline for applications, they are probably ghost jobs. Other than that try to remember it's not your fault, and if someone tells you about the "definition of insanity" tell them to flip a coin a hundred times and see how often they get a different result.
I feel your pain. Many years in tech, job hunting for a switch and cvs aren’t even getting to interview. Next day rejection emails for jobs I’d be a good fit for. The market seems tough at all levels of experience
