Big 4 does little (or none) of what you described. May be good or bad for you personally, just depends on what you want
Within big 4, it’s firm by firm and location by location, e.g. PwC does more of what you described than EY, ans NYC might have more of AML than Chicago. I think the boutiques are better, FTI, A&M, Ankura, in terms of quality of projects and pay.
Ankura, BDO, Charles River, FTI, Kroll, Stout/Claro if you want corporate clients with a wider range of engagements.
Aon, Marsh, WTW, and to a lesser extent Hub if you want to focus on policyholder insurance work. You will only do insurance work but you also won't have to do much BD as you're spoon-fed work by the claims teams.
BakerTilly, BCS, JS Held, Meaden & Moore, MDD, RGL, if you want a heavy focus on insurance company work. AIG, FM, Crawford, etc. also have internal teams. Working for carriers and adjusters sounds like absolute hell though.
Alternatively, go on the ACFE website and find smaller providers if you want better balance. There are specialized recruiters (LVI) who focus on the forensic accounting space but I don't know that they place many candidates.
