1hr everyday is enough if you're consistent it's enough. And let me tell you in 2 to 3 months you'll a fullstack developer who knows concepts (from your notes this is very imp so you can revise in future while interview etc) and practical. Do it. Just start I know you must be googling and searching for a solid concrete plan through qoura stackoverflow etc etc reading many guidance. Now stop googling how to be fullstack developer and start googling "Beginners javascript" "Es6 concepts" "Nodejs tutorial" "React tutorial" "Mern stack" etc and start watching these videos make a digital or paper note of that and learn.

I would say start with javascript. The road map would be, from Udemy or anywhere buy a course or use free videos from youtube with whatever you are comfortable. Watch that course make notes. Then try to build a crud project with nodjes react or angular and mongodb.
Javascript is all you need to know to be a fullstack developer. Angular or react course, nodjes course, mongodb course.
