1. There’s no situation where you “have” to drive in FasTrak lanes - you can just avoid driving in those lanes on the freeway. Make sure you turn that setting off if you’re driving to East Bay or North Bah, otherwise you’ll drive a super circuitous route to avoid bridges.
2. It’s really not too far (60 miles round trip is similar to the average American commute I think), but you can always study the route ahead of time and get your maps set up beforehand. I would also familiarize yourself with the SFO layout, as it can get a little hectic while driving there if you’re not used to it.
3. No special documents are needed to pick someone up at the airport, just standard driver’s license. If you are planning to park in short term parking to meet her at the terminal (vs curbside pickup), you can pre-pay parking or pay on site.
It sounds like you’re a pretty novice driver all around, but be calm and be aware of your surroundings and you should be fine!

1. You don't have to drive if you don't want to. There's also Caltrain+Bart to SFO.
There's also Lyft or Uber or SuperShuttle.
2. You need the same stuff you would need anywhere else driving. Even shopping for groceries... Up to date tags, registration, proof of insurance, license, consulate get-out-of-jail-free card, diplomatic passport, etc.
3. From Sunnyvale, you can take 101 all the way and back, avoid Express lanes if you are alone and don't want to pay.
