I found that it really helps to get my work email off of my personal phone. I don't feel so pressured to respond when I don't see them and actively have to seek out my emails in order to stress about not responding to them, lol.
2hrs of checking email every Sunday night = 104hrs per year you spend working for free. Stop that. Give that time to you and your fam.
I'd say take off personal phone or block it on weekends. I used to be one of those people who tried to get a head start on Sunday night but it didn't really do any good for me, so I'm like whatever...if I need to respond to something, I'll just respond "I'll look into it in the morning."

Honestly, I totally understand where you are coming from as over a decade in, I’m finding it’s beginning to give me some level of anxiety which was never there before. Whilst others have said you don’t have to read it until Monday and it seems like an easy fix, I just want to acknowledge what you are going through and how those emails make you feel. An equally easy fix is to schedule the email to be delivered on Monday, but I guess that is too much of an ask from them.

I used to read them and mentally prioritized them when I got in on Monday. I don't think I acted on them, but reading them gave me a head start.

My strategy has been to block out 2 hours from 7 to 9 AM to go through emails, determine what actions to be added to my first things first, and take action. There are several drawbacks, where I have to say yes for those to interfere with the time due to being popular (the guy who can provide quick answers), and saying No that creates an emotional withdrawal in the emotional bank account. Now I am retied, my spouse is happy to have her husband full time, where we passed our 45th anniversary.
One compelling approach is to divide your pay by your actual hours vs. the number you were told to expect. When you see your rate dropping like a rock, it’s sobering.
I once compared my “hotshot” consulting rate with a teacher. He won when comparing the rates and hours.
Anything that comes in during the weekend is an automatic "nope" from me. I don't look, I don't acknowledge if I accidentally see something. Emails can always wait till Monday.
Of course, the exception is prior arrangements which I've specifically agreed to. Otherwise, again, no acknowledgement till Monday.
I don't check work emails over the weekend. Your employer doesn't own you, even though they might think so.
