Lots of variables (your experience level, industry, prestige, etc.). But without knowing any of those, I can say that it would be odd to see no mention of education at all.
Unless you are so pressed for space with stellar work experience, I don’t see why you need to remove it. Are you truly going to maximize those few extra lines by removing your education?

More than likely, yes you should keep it. But it may depend on the roles you are applying for and whether the education is relevant.
My previous degrees are completely different than what I am currently pursuing. They are two different fields.
That’s why I have been curious about that. It hasn’t been easy to get a job lately and I just wanted to see if anyone might know something about that
It’s likely important to keep the degree because it shows a college education, which like it or not, has become a baseline expectation for most jobs — not showing it could make it seem like you don’t have it
