If I were to complete army boot camp and be assigned to an infantry squad, will I get to choose which weapon I'll be carrying? Or is there like an evaluation process for that?

You get told what weapon you get.. most likely you’ll be a sawgunner or 240

Unless you are in a specialized unit, 99% of guys end up with the same weapon. A few will get mass causality weapons, but usually it’s the big boys who carry those, due to weight. But, it’s not like Call of Duty and you choose, you get what everyone else gets and what your unit has.

Definitely not like call of duty. You'll be assigned the same weapon as everything else unless you qualify for a different weapon based on your own size and/or experience. But that will take some time anyways.

You’ll get the standard issue M4 or soon the replacement SIG as a standard rifleman. However, your squad leader will assign you a different weapon if he deems it fit. For example the 249 or the 240. It’s possible you can also get assigned a Carl Gustav or a javelin. You don’t get to choose any other weapons. They’ll choose for you.

In the Army we have BCT ( Basic Combat Training) then AIT ( Advanced Individual Training). But for infantry you have what we call OSUT ( One Station Unit Training) which you will have to complete without quitting or having issues. Once you graduate you will be sent to your unit or your secondary school for example ( Airborne school and or Air Assault School). Once you get to your unit and everything they will go over everything there. But the short answer is No. There is a school for everything

If you’re more muscular, you’ll likely get assigned to a weapons squad, which means you’ll probably start carrying ammo or a mount for a SAW or Bravo, but if you’re not, you’ll probably just be rocking an M-4 like everyone else.

If you want a certain type of weapon to use first you need to be trained on that weapon and be to a point mastered weapon at which school/class you are trying to pursue. M4’s and 240B’s are you automatic intro in to whatever job you do.

My advice: Concentrate on yourself above anything else, follow orders but also know how those orders affect you, serve your country but never forget you are serving yourself first. The objective is not to die honorably but to survive dutifully. What else would you add?
