Join non-profit boards. I’m on one that does healthcare and social services to vulnerable populations and it scratches my itch. I also volunteer with another org that promotes corporate social responsibility and ethical capitalism. I’d like to be on the board of that one but for now I donate my time a few times a year and it’s very fulfilling.
Obviously, Google it. There is tons out there on this. While I disagree with everything (mostly) that these organizations stand for (bunch of socialists, really — I identify as an anarcho-capitalist), there should be no shortage of organizations to work with. Getting paid — well that’s likely another thing to contend with.
OP, if you’re still in private practice, just do pro bono work approved by your firm. There is a ton of pro bono work out there. Contact your state bar association. But, to supplement your income by taking paying clients—be careful. You could end up causing conflicts you wouldn’t have any idea about. And find yourself being fired and, god forbid, the subject of an ethics complaint.
Pro bono is a great choice. The ABA's Council of Appellate Lawyers has a pro bono directory that lists resources in most states.

I joined a the Army Reserve as a JAG. Took 4 months leave from BL for training and then went back to my firm, just with an added monthly drill weekend. A bit extreme, and a giant pain in the ass sometimes lol, but it worked for me/scratched the itch and I’m glad I did it. I’m done with my service now and fully back civilian side in-house.
I did it as a third year. If you’re in BL, you’ll be fine re: selection. The main financial perk is the healthcare, Tricare Reserve Select, which is excellent (especially if you have a family) — I saved about $400/month with it just on monthly payments, and you pay basically nothing for actual care. No other meaningful financial perks really. EDIT: If your firm pays your salary while you’re at training, that’s a big perk. Mine counted it as unpaid leave and I just lived on my army salary, which was fine because most things are paid for and Georgia/Charlottesville are cheaper than NYC.
Find a volunteer organization. I work with CASA (court appointed special advocates) they are in every state.

This is a good point. My organization liquidated a multifamily portfolio and the buyer’s lawyer was on his own but worked for a larger firm. I did most of the work (I usually insist on this) but this was his side thing. But OPs point was, again, to help the less fortunate of the earth. Hard to that on the side and make money.

Working in public service may not be the panacea I’m thinking it will be. Like any job, there are always some negatives. I also romanticize some of these jobs (prosecutors for instance). I did that with the law in general and alas here we are.
Pro Bono and non profit work might be the answer. I’m doing that now and it scratches some of itch but not exactly what I want. I may just need to change my mindset.
Lots of public service will prohibit you from outside employment of any kind due to a potential conflict of interest. Depending on what you make and where you'd go to, the paycut may not be as bad as you expect if the benefits are good enough
