I'm so sorry this is happending to you. I would say something like "This outcome reflects a resourcing gap we’ve discussed, how can we address the root cause together moving forward?” Also, talk to someone in HR, it's not okay that your manager treat you like that.
Been there! I don't have better advice for your current experience other than potentially swallowing your ego in lieu of saying I told you so, but for the future, I recommend being really firm about the dates by which you can get projects done. Then, when they try to dump something else onto your plate, say that you can either prioritize the new thing and push back the deadline of the first thing, or you can tell them that they will get not ideal quality if you're stretched too thin. And acknowledge that the reason they want you doing this work in the first place is because you're good at it, so you want to put your best foot forward.

I've definitely started documenting everything so I have a paper trail in case things go super south.

I’m so, so sorry this is happening to you. That’s beyond frustrating, especially when you’ve flagged this is happening. I echo what Comms Manager 1 said and talk to someone in HR. I hate to say it but sometimes it takes these extremes for real, meaningful change to occur.
Also, put everything in writing!! The more proof you have to show you are stretched thin, flagged that, and this is the result of that - the better!
