A good piece of advice is the simple adage "show, don't tell." If you can quantify things you've done, and show how you've been a valuable contributor to your employer, that will carry some weight. If you talk about things a potential employer feels are less important you could put yourself at a disadvantage.
Sometimes it’s not about skills but how clearly you communicate your thinking. Walking through your approach can really help.
Be confident, but not cocky is the best advice I could give someone. If you don't know something, say "I'm not sure, but here's my thought process, and here is how I would find the info I need."

I would focus on two to three key strengths. This way it doesn't sound like youre a know-it-all but a laser focus engineer. And if someone tries to sell that you need to wear many hats, stay focus on what you do best.
