I know this is probably easier said then done, but what has really helped me is changing my mindset towards interviews. Interviewing is a two way street. As much as they are evaluating you, you are also evaluating them on whether you can see yourself working at this company and with these people. The decision is also up to you too!
Honestly, I’ve tried this in the past and it has worked out to a certain extent. Everything starts off fine, but if I get caught off guard with a question it’s just down hill from there (rambling and repeating my words 🤦🏿♂️). As weird as this sounds I try to put my self in awkward situations now to help me get better at being uncomfortable and rebounding from uncomfortable situations.
I am a Recruiter and something that helps me when I interview is talking slow. I notice that I speak fast when I talk about things I am really passionate or excited about. So off jump I just try to talk slower so I don’t ramp up talking fast. I also write on two pieces of paper and tape them on my wall which is right in front of my laptop/camera. On the papers I wrote just brief scenarios that I can quickly discuss in case they ask me one of those off guard Qs. I’ll have like my top 3 traits and challenges, scenarios where it was challenging working with someone or how i manage my time. I also have taken a calm pill before, NatureWay Calm Aid works for me. Get your home at a comfortable temp before the interview. Go for a walk or at least outside to get sunlight maybe 2 hours before. Most importantly remember that you are the asset :) they need you
Personally I tend to ramble when I’m nervous as an interviewer or when I’m being interviewed. So I try to take deep breaths, literally SMILE(because that’s my relaxed tone of voice) and proceed. Just renter you’re human/s having a chat
Research the company and review the job description. Have 15-20 questions written down regarding the team, the role, the culture, and plans the company has, because a lot will be answered throughout the interview. To ease anxiety, take a 20-30 minute walk prior. Get there early, have water on hand. Good luck!

Sounds cheesy but role-play common interview questions with a friend either in-person or via zoom. Stick with it and time yourself.
See if you run out of time to cover important topics and relevant examples.
