Hi Fishes,
I have 7.3 YOE and my Tech Stark is SAP UI5/ Fiori Developer.
I currently have 2 offers in hand, one from Sopra Steria, Technical Lead 2B - CTC 18.6 LPA which is completely fixed and the other offer is from Capgemini, Manager C2- CTC 18 LPA(Variable 10%) and joining bonus 50k.
Please help me by suggesting which one I can go forward with.

I would advise skepticism when you see numbers in job postings. Some states require salary bands to be posted, and those numbers typically have an unrealistic higher part of the band that would be unattainable in almost every case. And you'll see instances of people going to interviews and being told the numbers in the job posting don't apply. In an employer's market like this, companies feel they can get away with that.
Nope, I've known since I found out a coworker - who is completely, wholly worthless - makes 30% more than I do. She joined a year after I did too. Fun times.
The only valid numbers are what’s actually offered. I’d argue some of those advertised bands are aspirational as best.
As a former Logistics Manager for over 25 years I can say this with confidence. Unless you are reaching Director Level you are extremely underpaid in Logistics. When you find a job outside the logistics world and begin a new career in warehouse management, account management or even customer service management the pay increases about 15-25%. To boot what your new employer considers "fast paced" or "high stress" is what you would do with your spare time at a logistics company. However, now is the time to sharpen your skills in leadership. Once you do leave and take a "normal" job the gauntlet of what you've been through and skills you have learned will make the new position cake. You'll find yourself asking the new employer DAILY is there more, what else can I help with or do. You will be amazed (if you are at a good company) how fast you'll advance.
