Exit interviews are all about companies making sure there are no HR issues that could be an issue for them once you leave. I wouldn't lie, but I wouldn't volunteer anything either. "I was ready for a new opportunity" is all that needs to be said.
I hadn’t thought of it quite like that but thinking back on past exit interviews totally see the point. It’s a shame that real feedback wouldn’t result in some positive changes at the company but it’s hard to see HR making that type of impact

I’m the same as you. Unless it is genuinely serious, I find it easier to just say “I wanted new opportunities.”
I’ve found it rare that flagging issues in your exit interview actually makes any change, sadly
I always tell them the truth but in a respectful way. You can't expect a company to improve if they never really know what they need to improve on. And if they are underpaying their employees, they probably need to know that as well.
Don't owe the company anything. Keep it neutral or shade the truth. You never know if any negative feedback from you puts you on a do not rehire list. Avoid that possibility.
Earlier in my career I might have lied in case I ran into someone later at a different company. Today I would enjoy telling the truth under those conditions.
