I remember having this conversation about our first baby, but don't remember the exact outcome of the discussion. Definitely wasn't 3 months because we traveled for Christmas about a month after she was born.
As extra perspective, we just had our 4th baby and literally didn't even talk about this. Babies are resilient and new borns are the easiest age to travel with, imo.

Our thinking was to wait until 2 months for the first big round of shots. Then travel with the understanding that it will be a bit slower and more of a pain, but that’s what it is. You will need to do a lot more pitstops for feedings, will need to make sure your baby is not confined to the car seat for too long, and your spouse may need to ride in the back for entertainment / calming purposes. We did a 5 hour drive at 2.5 months and it was fine, just slower than usual.
How long is the drive? How big a headache it is will depend a bit on how long your baby needs between feeds.
That’s going to probably be closer to 9-10 hours with stops for mom and baby. As others have said traveling with the baby will probably be pretty easy as he will sleep a lot of the time anyway. But you probably need to plan to stop every 2.5-3 hours.

8 hours is way, way longer than they recommend for a baby to be in a car seat at that age. Your call on how much you heed that guidance but worth educating yourself regardless.
Tactically, super depends on your kid and their mood. You might stop a ton or just a few times. It’ll add time for sure so just know that going in. We traveled with our 4 month old about 5.5 hours and it was downright miserable. She was having a bad day and was just generally fussy around then. Made for a rough trip both directions.
What age did you all start to fly with your babies? Just like OP, we're due in September but our family is back home in Europe, a 7+ hour flight away
Flew with our first at 9 weeks. Just time it around the naps for flights <2 hours and feed for takeoff and landing. Little ones at that age are pretty easy to fly with.

Flying is actually easier than driving IMO and experience. Just have to have the fam on the other side have the big things you need like a somewhere for the kid to sleep.
