Smoked yardbird. Spatchcocked & split, with backbone thrown on to include with saved bones for soup later. Smoked fast & hot, 350-450°F, using hickory. Usually use cherry or apple for poultry, but hickory was what I had available. Tasty, but confirmed I prefer fruitwood for lighter meats. Glazed with a sauce of orange marmalade, soy, garlic, fish sauce, adobo chili, and balsamic. Served with corn on the cob roasted in smoker in a foil packet, and a chunky summer tomato-cucumber salad.

I smoked it to make storage more durable as I collect bits and pieces. When I make stock, I use a BIG pot and make lots.

Looks really good! What kind of smoker do you use? We’re looking to get one but already overwhelmed with options and not sure what to look for really. Also wondering if we should just wait a couple months and maybe hold out for some end of summer sales. Seems like that can always be hit and miss though.

I’ve got an Oklahoma Joe Highland offset. I prefer an offset stick burner. Requires more effort than a pellet, but I never have to worry about electronics or pellet feed problems. Delivers superior results IMHO. I start my fire with lump hardwood charcoal, then maintain temp with wood splits. Toward Labor Day you can probably get an end of season clearance deal at a big box hardware store. They’ll need room for snowblowers!

Omg that looks so good. We need to get outside and use our Traeger more. We've been in such a heat wave that we almost don't even want to cook outside because our AC is so good inside that turning on the oven doesnt' really make a difference. But that looks so fire. I've got an orange habanero marmalade from a local jam maker, gonna have to put that in my next marinade. Thanks for the tip!

That looks super delicious!!! Ugh I can imagine the smokiness. Thinking about it has me salivating. Also what’s yardbird? I’m assuming it’s a chicken but I could also be wrong since I haven’t heard that term before.

This was by far the most interesting wine cellar I have ever seen. It's not temperature controlled because the caves in Cappadocia remain chilled even when the temperature outside is over 40゚C!

I joined a competitor company due to toxic boss in June 2022 which my previous company has got idea about and have still not recieved F&F money and experience letter since 3 months.

Can you dice/chop onions and not tear up? If so, how many till you tear up?

As it’s been getting colder I’ve been dabbling in soups. This is a brie and mushroom soup paired with balsamic onion & mushroom toast. It was super tasty and really hit the spot. It can also be used in place of cream of mushroom from a can in recipes if you’re looking for a different taste.
