AC1- you should def try and stay there. Hotel doesn’t start until 45th floor and service is impeccable. Just don’t drink at the hotel bar..... $35 for an old fashion. Ouch!
Stayed at the Miyako Sheraton in December, and while it's not in the middle of everything the subway/train is very close and super convenient
I stayed at the Prince Sakura. It was easy to get to the Shinagawa station which has the shinkasen line as well as the other JR lines.
Ritz Carlton Tokyo. Good location. Right above a subway station

Ritz Carlton in Roppongi Hills! (Disclaimer, I haven’t stayed there but want to)
Prince Sakura was nice and cheap, good breakfast too. Ritz Carlton in Roppongi Hills is a lot more happening but also more expensive
Tokyo Marriott- very close to the shinagawa station. However, If you can , you should pick a Spg property close to the Tokyo station. That would be more convienient as it’s the heart of the city.
Shang-ri la Tokyo station
Park Hyatt. Watch lost in translation and then there will be nowhere else you want to stay...
Grand Hyatt if you’re flexible
Prince Gallery is incredible. Park Hyatt is a classic but very dated and a bit of a walk to subway. Grand Hyatt is nice but boring
