I don’t assign very much homework at all because I found my students just never did it. Their homework is to finish things they don’t get done in class (mostly because they didn’t use their time wisely). I usually assign review activities because a test or a quiz. I will take it as a completion grade most of the time. If I find most students haven’t done it, I may even give those that did it a couple extra points on the assessment.
It depends on the content and age level. I make sure whatever I assign that will go into the gradebook is linked to a specific learning target and isn’t busy work. I try not to give out more than 1-2 assignments per week and anything I assign, I also give at least 1/2 a class period for students to get started on while I’m there to answer questions. Most of my assigned activities are based on what students scored on their most recent unit quiz. I have two different types of assignments for students to work on after we take each quiz- one for students who struggled (<75%) and need to review the basic concepts, and another for students who did well (>75%) that has students go deeper into the topic and/or has an artistic component (creative writing, drawing, diagramming, journaling, etc) using text evidence from an assigned portion of the textbook. This way I know that what I assign is relevant and more specific to students’ needs.
We take three quizzes per unit and I usually have a map and a reading assignment in each unit so maybe five assignments or so per unit.

I stopped giving homework, except for something not finished in class. I have found most student simply don't do it.

They all do it! That’s why the only homework I give is any class work they haven’t finished.
