You burn many bridges. Why would you not give two weeks?
I wouldn't say that's "it". Networking goes a really long way in this industry. Some people boomerang back, others end up crossing paths again when one person or the other goes client-side, others end up at the same firm later in their careers. You don't want the last thing you do at the company to be negative and overshadow everything else you did.
That being said, you're an at will employee so two weeks is the standard and a courtesy.
Other things to think about are time sensitive things like bonus, 401k, vesting, health insurance etc. Hard to give to much detail without knowing why you're concerned about 2 weeks.

The world is smaller than you think. Don't burn bridges.

I don’t understand the question. 2 weeks is a generally accepted common courtesy. Do you think you’ll go to jail if you don’t?

Depending on the company, you could be ineligible for a rehire. Boomerangs are very common in our industry, so you don't want to close that door.
You will definitely burn bridges, and consulting is a pretty small world. That could bite you.
And it's 2 weeks. Come on. Who can't give 2 weeks?
