Fish tacos! Cod is perfect for tacos. And dead simple to make, just sautee in a pan with some EVOO and then spinkle with salt and lime juice at the end. Cut it into slices for taco-sized portions.
Do you have an air fryer ? light breading in an air fryer is so good.
I usually sprinkle a generous amount of blackening seasoning on it and throw it in the pan with some butter. Another option if you're trying to go more classic, salt and pepper with some butter and lemon is a great, simple way to go. Pair it with rice or potatoes and a vegetable and you've got a quick and easy meal. I usually make this at least once a week.
I like to mix panko, parm, parsley and olive oil, put it on the cod and bake it. Squeeze some lemon on it. Very good.

When you have more time, check out Nobu’s miso cod recipe. It has to marinate for 2 days, but it’s worth it. Couple tips though:
- after the first 24 hours, take the cod out of the marinade and let it air dry in your fridge. I’ve found that 2 days in a marinade bag makes the cod too soft, down right mushy.
- because of the miso and sugar in the marinade, the fish can burn quickly. I’ve found you can fry the fish on top of a piece of parchment paper instead of directly on the pan. Then when you flip it, stick it in your oven to broil. The sauce doesn’t burn but you still get a nice glaze and char on top but a very tender texture
I'm not going to lie I really hate cod. I think its the texture but i just can't do it. I haven't ever had Haddock but we eat alot of Tilapia and Salmon in this house. We usually just bake it in the oven with some lemon, salt and pepper and voila!.
