If you want to find some new wines one of our clients is a new online wine marketplace (Scoperta = discovery in Italian) and you can get flat shipping with first purchase in the flight club . Fun service if you want to try it . (We also produced a hilarious opera video on YouTube if you want a laugh) https://www.scopertawine.com/
A champagne saber or a nice cooler is also a nice gift. You can never have too many of those.
Your price range would help a lot to narrow the suggestions.

Yeah what gives OP, the suspense is killing us, what are you working or something?
Grower champagnes are really incredible these days- way more interesting than a lot of the entry-level stuff from the big houses, and generally there are a lot of good deals. Look for Hure Freres, Camille Saves, Bereche…
What is your budget? And what kind of champagne does your friend like? (Eg., Are they a label person? Do they drink mostly veuve cliquot? Do they know a lot about wine already? Do they like rose, blanc de blanc, experimental, etc?)

Agree, love grower champagnes. Avoid the big houses you may have heard of. Would add the biggest thing to understand is how sweet they like things. Really will influence their level of enjoyment.
Find out if she likes blends or one grape - i.e. blanc de blanc, etc. yes, vintage tends to be more special because producers only make a specific vintage if that year produced a particularly great crop. Otherwise they make blends. My favorite producer, Henri Giraud, makes an MV, which is mostly vintage x but still blended a bit
What’s you’re price range? And Champaign as in French? Or sparkling wines generally?
Hahaha I drink Champaign all the time. Can’t afford the good stuff from Champagne 🥂

I was gifted a bottle of Vielles Vignes VV26, Grand Cru for Christmas. I've yet to open it, but it seems to be a respectable gift. Obviously a bottle of Veuve is also always a safe bet.
Look for vintage champagne, they are pretty unique and interesting to learn about for wine geeks . What's your gift budget?
Have you ever tried old champagne 🍾? Very different experience …
I’d get any Krug champagne or Billecart Salmon Cuvée Nicholas or Elisabeth Rose. Jacques Selosse Brut Rose is hard to find but really good - price point is really wide too.
Ruinart, Krug, billecart
Tattinger hands down is the best champagne. I became a fan after I visited their cellar in Reims.
Epernay in france is where a lot of the champagne is actually grown but ‘champagne’ champagne tends to be more expensive. Look for epernay champage for some supreme quality at a cheaper $$
