What's a good way to not agree on a set number on these calls until I get my offer?

My LWD with TCS is 10 June, I currently hold a offer of Cognizant of 18.3LPA and promise to send me at Onsite within 6 months, apart from this I have offer from TalentCafeSolution- Client JC Penny(26.85 Fixed), Infocepts (26.5LPA, 5% variable), Nice Software Solutions(25.98LPA,10% variable) , ACS Solutions(26LPA,5%), Allianz(25LPA). I am confused which should I select, trusting Cognizant and joining on less or going for one the company mentioned above.

Got an offer from pwc in the data privacy role.
With 13.5 Lpa currently i’m at 12 and made switch on march.
Though my current company is an mnc but not that big and no work pressure is there, amazing work life balance. However, there is little to no learning and its very slow, the project is just starting and the client itself is not clear what they want. Do you think I should switch just because its a big 4. I recently moved from litigation to transactional and am struggling to reach billable targets. In litigation it was no problem hitting 1800+ hours but don’t see how I’m going to come anywhere close to that in a transactional role.
