Be Honest About Your Experience
If asked about Excel proficiency, you can say: "I haven't used Excel extensively before, but I’ve recently been practicing key functions and feel confident in my ability to learn quickly."
Talk About Problem-Solving
Even without prior Excel experience, you can highlight your ability to learn and adapt. Employers value candidates who have successfully picked up new processes, tools, or software under time constraints. If you’ve faced situations where you had to quickly get up to speed with unfamiliar technology, sharing those examples can reinforce your strengths.

Learn the basics of formatting, pivot tables, basic formulas etc
YouTube is a great place to start. Large number of people offering their knowledge on excel (basic tutorials, specific formulas, etc). Pretty sure Microsoft has some free online stuff to look at as well. I'd stay away from programs that require payment, as I feel its not worth it (especially if excel isn't the only thing you'll be doing on a job)
Recently I’ve found that GitHub also have some good learning materials you can checkout
