For junior positions I mainly look for motivation and understanding of the job for the first round: If the position is about React and your CV and letter only talk about your PHP experience, you are out. If you write in the letter that you have mainly worked with PHP so far but started picking up React in your spare time, then you are still in. I usually do have a much harsher later round, though, and try to get as many devs in there as possible: a coding challenge that actually represents working at the company. But for that it doesn‘t matter whether you succeed because you already knew everything or because you learned things on the way and put in the grit. Both are valid path. At the end there is a round of working with the actual team, but this is mostly to avoid fraud (e. g. if you ask someone else to do the coding challenge) and to make sure that you will be happy in the team.
