The new company I’m at now sent me an email from an email address that was HR@companyName.careers saying I was accepted for the position. They gave me paperwork to fill out and sign to accept the position

Nah, I use them when I'm actually sick. The sooner you give yourself time to rest, the sooner you'll heal and get back to normal.
I use my savings for sick time and save my PTO for vacation. I'm fortunate my husband has lots of time off and flexibility to stay when the little one is sick.

I had never really used my sick days unless I was really down and out. My work gives two weeks and they are separate from sick days and you can not roll them over from year to year. Because my work allowed me flexibility with work from home I generally did not need the sick days, many offices are starting to implement more days in office so I would expect that the sick days will now get used more often then before.
I usually use them when I am sick. I am thinking of starting to just schedule sick days for mental health on a monthly basis, just to make sure I use them and I am taking a break
If it's just a minor sniffle or headache that I can power through, I might tough it out and save my sick days for when I really need them. But if I'm feeling under the weather and really need to take a day off to rest and recover, then you bet I'll use one of my sick days without hesitation.
