I just did this a few weeks ago. I had only been there a week! The walk-in malfunctioned, but we kept the door shut as much as possible and continued on as normal. I assumed it was going to be fixed that night. Went in the next day and it was still broken, they hadn't moved the food anywhere, but they were trying to use ice. Walked in the next morning to my boss saying he was just going to "taste test" the precooked meat in THE STILL BROKEN WALK-IN. Ya, I quit, and reported them immediately.
Oh boy… every city has a health department. Some cities have like a health department hotline to report issues. However, if you do that and your place gets shut down, be prepared for some people getting fired or laid off… if you can somehow talk to your manager to get a better cleaning crew that might be a better solution. Or leave and report.
It is never wrong to do the right thing.
