Unless you are going into A&E doing MEP you're not really going to need a PE or EIT.
If you are customizing your resume, could be your resume need some fine tuning.
Make sure that your experience does not sound like a regular task list, this will guarantee your resume is over looked, always want to show your value in every bullet, also avoid any resume format that is too cluttered with a lot of columns and side bars
Basically if your resume is hard for a recruiter to copy paste into their scanning software you will probably not get a second look.
Good luck, the market isn't actually that bad in Austin for an ME right now
Yeah, I have been focusing on highlighting milestones and accomplishments on my resume. I made the mistake of spraying a task list everywhere the first month of being laid off out of panic. I guess the biggest thing that worries me is that I was only a little over 2 years into my career so I am hoping that doesn't hinder hiring managers who will consider me Jr to the field. I will definitely look over my resume again to make sure the formatting isn't messing with my odds. Appreciate the feedback!
Where are you looking? LinkedIn? Indeed? Zip recruiter?
Are you aggressively applying? Are you customizing your resume to match up with job postings?
All of those except zip recruiter, I am applying to at minimum 5 jobs a week, max around 15. I am trying to avoid breaking my lease and relocating since my partner is going to college here, I don't have a PE nor am I an EIT so that narrows the search down some. Yes I am adjusting my resume.

^ seems like every engineer I meet is a MechE. Lots of people here from Tesla since the Tesla layoffs earlier this year, as well as from Applied Materials and Samsung.
