I have a current CTC of 6.6 and Mastercard is offering 8.9 (including variable ) . I also have an offer from infosys of 10 ( including variable). Which one should I pick considering work life balance and appraisal.My entire doubt is that will they bring me on market rate after appraisals as currently they are not offering very good hike.

No you don't have to compromise on your salary, but look at the skillsets for those roles you apply for. Upper hand if you have done 5 Million ARR, and have low hanging fruits that you can bring on the table for the next role immediately. Speak more about your REVOPS roles and revenue realised.
Also look at fixed component while you negotiate, say 30 Lakhs as Fixed and rest could be as per the coy policy , but not Gross as 30LPA, which will include your gratuity, +++, and targets achievable from 3rd month and not Day1. So check for a revised structure, without variables untill your probation is done.
