It's a poor trend that generally shows the lack of UX maturity at the company. If you have time to spare/waste you can always apply and verify what their goals are and whether they actually match what their posting says. Otherwise, I'd avoid them and look for more promising teams to work with.
I understand your problem. I interviewed for a job where the feedback on why I didn't get the job was "we are very impressed by you... but we needed someone with a Graphic Design background." A lot of small and medium sized companies don't really have the Strategic UX or Product Designer roles.
The danger in taking a job with a UI/Graphic design requirement is that you are going to spend 90% of your time doing UI and Graphic design work. I had a similar background as you, and when I was hired for a role with a UI Design focus, UI Design is all I ended up doing (in the interview, I was given the impression the Design team had more of a 'voice' at the company than they really did). Product Management "owned" the strategy and the UX direction, and I was ignored, bored, and frustrated.
