Meh unless you and your friends are really strict about the wine pairings, I’d just make a fab assortment. I like to do: 4-5 types of cheeses, 3-4 types of meats, 3-4 types of crackers, grapes, pear or apple slices, honey, fig jam, marcona almonds, baby pickles, olives

A soft cheese (Brie, Camembert, chèvre), a firm cheese, a bleu cheese, an aged cheddar, and something smoked, like a smoked provolone or Gouda.
Fig jam, prosciutto, white sharp cheddar, blue cheese if you’re a fan, manchengo cheese, Brie, nut mix, pickles, fresh fruit (apple or pear slices; grapes; berries). Maybe a little chocolate
When I’ve done this, I like to thing of things in terms of contrasts and complements. If you know the profile of the wines you’re having and want to bring a like-for-like, that can help less experienced people identify tasting notes (I.e., dark fruits). For more experienced people, I’ve found having stronger flavors helps bring out parts of wine you might not otherwise notice (I.e., having the same wine after eating hot sopressada vs sweet sopressada)

I’m always a fan of a good honey with aged cheeses
Definitely would be helpful to know what wines you’re planning to taste, but generally you are going to want to avoid washed rind cheeses, as they can overpower wine.
Neutral cheeses like Swiss help clear your palate between wines
