How do I go from where I am to where I want to be?

Does anybody have a resource available for pricing and billing? I am 2 years out of law school, working as a corporate attorney, and wanting to go solo. Ideally, I will take my corporate client with me, but am working to build work on the side during the transition. Also, do you have any recommendations for document preparation? Copywriter with serious imposter syndrome at new job! How do senior writers up their game? Was in-house 1.5 years and underpaid in NYC. With only previous freelance experience (and nonprofit and grant writing before that) figured I had to slog through it for years. Our company is a small company with 80-100 employees in India, what the company does is ask us to track every single minute of our day, from getting into the office to what time we got up for lunch, tea, etc. for everything we have to put a log, do you guys think this is a healthy process for a company to grow? All the employees be frustrated that they have to go to office regularly and finish 9 hours somehow, a measured break time is also allocated.
