Most of my transactional work is already fixed fee as I know how long these things take.
I work with a couple of big (HUGE) clients who require this model. For discovery, fees are based on a rate per thousand documents.
If you go this route, make sure your engagement materials specify *when* in the life of a task payment is due (when started? when completed? in installments during?) and what happens to the fee if a task is started but not completed (e.g. you settle after you file a MTD but before replying to the response or arguing the motion).

Motions to dismiss. We're aggressive so every case that we can make an argument to dismiss we do. Every pleading that we file we expect an MTD and prepare for it in our pleadings. So before we even draft a complaint we brain storm the counter arguments and try to plead around them. It's not uncommon that I have a draft opposition before it's even filed.
Discovery will magically become cheaper when you don’t have an incentive to stuff responses with 70 pages of boilerplate objections that have been reviewed by 4 different attorneys with 9 rounds of global changes made.

I can’t handle putting my name on a case I didn’t handle all the way through personally, but sounds like an admirable goal.
I am very intrigued by your mention of “tech” for discovery... can you elaborate? I am trying to envision how this could work... I always find so much unexpected stuff buried in email chains that people forgot to clear before forwarding around... I have found so many strategy adjustments by reading everything but it absolutely consumes my life when discovery volume is huge, so I couldn’t imagine doc review where I have to come up with key words or something...
