If it’s new skills that are in line with where you want to go with your career - ALWAYS take it - even if it’s not $15k more. If you’re just turning a crank / think you’re in a stable job - you’re actually not. One day your boss and HR are going to call you into a meeting and tell you you’re getting down-sized.
If you didn’t invest in yourself and get more valuable skills and kept your career moving forward - you’re going to get left behind
Depends how much the $15k means to me. If I was going from like $85k to $100k, I'd do it. $150k to $165k, probably not.

I’m in a place in my career where I want stability because I have young kids
But if I didn’t I’d take the higher pay
Asking an anonymous group of people is absurd. Only you can answer that question.
Have confidence in yourself and trust your answer.
I just left a position where I had more ownership for a bigger company with more systems (and more pay). They LOVE the skillset that I built at the last job and it has absolutely launched my career in a positive way so far.
I think you should take the ownership route. I‘m only at the beginning of seeing the payoff of my time spent at the last place and it can only improve.
Personally, I’d take stability. You really have to figure out if the extra money and work are worth it. Maybe it’s what you’d rather be doing, and that’s a good enough reason to take it.
Do you consider yourself to be a risk-taker and someone who wants to challenge yourself? The rewards for building that process could be very rewarding, but only take it if you consider yourself to be a risk-taker and someone who wants to push themself.
