Sounds like a good plan to me. Forcing yourself to count to five before responding should keep you from blurting the first thing that comes into your head. Negotiations are super important, so you want to make sure your response is well thought out and actually what you want to say.

Makes sense! It’s so hard to actually wait that long but the principle makes sense
I mean, you don't have to pause and stare into their eyes for five seconds very awkwardly. You can pause, look down, think, look at the window thoughtfully, it doesn't have to be weird. But I also think waiting for an arbitrary length of time because somebody said so is not necessary.
Isn’t it kind of crazy though? Five seconds is really a blink of an eye but when you’re in a salary negotiation or public speaking, it seems like a lifetime. However, it does make you look like you’re being more thoughtful and you’re thinking everything through.
You can even say “wow that’s a great question” and by yourself the five seconds. Don’t say it for every question that you get asked come up with some form of it.
