Lemon Za’atar Chicken Skewers, Grilled Veggies. Crispy Salt & Pepper Fries

I just ad-libbed this one. I was inspired by the Greek Soulvaki wraps and fries they usually serve at Greek takeouts.

Instead of Oregano, I used Za’atar in the chicken marinade along with lemon juice, olive oil, garlic, salt and pepper.

Veggies were seasoned with oregano, olive oil, salt, and pepper.

Tzatziki was spread over a large tortilla (although Lavash would have been nice but I didn’t have any nor did I feel like making it). Topped with chicken, grilled veggies, pickles, fresh parsley, more tzatziki, sriracha, and crispy fries seasoned with salt and white pepper.

A lot of time and components to this dish but it’s so worth it.

I feel like I’ve been neglecting this bowl. 😔 I’ve been doing keto with 16/8 intermittent fasting for the past month. By the time it hits my eating window, I’m starving and I don’t have time to make instagrammable meals. Like the one below 😄: Eggs and breakfast sausage with Spanish and Buttered cauliflower rice, and a salad. Not very exciting, I know. But what’s exciting is I dropped 15lbs!!! 😁

My pie day pie (belated!) Ina Garten’s chocolate banana cream recipe. My first time ever making a pudding. I have to say it was amazing to go from muttering “oh shit” for a solid 20 minutes of mixing the eggs/milk too aggressively into a foam and finally seeing it condense into pudding. Deffo recommend trying it!
