Recruiter supposedly submitted resume for position, but agency reached out to me directly about position. What to do?

I’m trying to fix up my resume to apply to other companies. It’s my first resume fix since college so I’m trying to see what to include/ take out.
1) Do I keep my internships? My leadership experiences in college?
2) How do I organize my engagement experiences - All combined bullets or separated by client?
3) How about my internal efforts? (I did 3 internal projects within the firm)
4) Education on top or bottom?

I had interviewed for Cognizant and I was asked to submit my documents for offer letter release. This happened on the same day as my interview(Friday 6th May). I submitted my documents and I am trying to contact the HR who scheduled my interview, but she is not picking up my call. My question is how soon can I expect the offer letter to be released? Does anyone have any advise on how to become a staff video editor at a creative production company? They usually don't have any "job openings" listed on their site.

I have 5+ years of experience working at a creative ad agency, but much of the work was pitch/sizzle videos (yuck).

I'm freelancing now which has been a great step in the right direction but I'd eventually love to be on staff at a post house like The Den, Cut+Run, Company 3 etc. pumping out cool work. Just seems hard to break in.

I'm reading this book on boundaries. In the work section it says I should tell my boss that I can't work after 5 PM. Knowing that advertising work commonly goes past 5 PM...would my job be in danger if I said that?
There's not really a rule book that says I must work until the work is done even though it's an unsaid expectation. Thoughts?
