I think you hit all the good stuff. I went to those spots when my brother used to live there. If you could, hour drive to Austin is nice too. Or hill country
Kiddie Park off Broadway, train near the zoo, Fiesta TX!! If they are special needs then Morgans Wonderland in place of Fiesta TX. Eat at the top of tower of the Americas for a nice view. Hike at one of the cool parks/hills in town. Candy shop near the Alamo.
What about Fiesta Texas?
We've struggled to do family vacations other than visit their grandparents in other states. Just going to San Antonio. Maybe next time we'll do Austin. Any good hotel suggestions? We're thinking the Hyatt off of the Riverwalk.
If you want to go historic and unique, stay at the Menger
Pearl brewery is an area that is very cool, and kid friendly-ish during the day. A lot of cool restaurants near the river but off the radar of most tourists
Natural bridge caverns are awesome but there's a decent amount of walking up hills etc a lot of parents were carrying their kids because they got tired, but probably the coolest thing I did in San Antonio!
There's also a zoo/safari thing by the natural bridge caverns, it looked cool but didnt have a chance to visit since I ran out of time.
It's a little further out of town by the Hyatt Hill Country Resort near sea world is very kid friendly. And they have a decent golf course if you're into that
Just got back from there - Natural Bridge Caverns is great. Had lunch at Mi Tierra at Historic Market Square which is worth the trip over. Drove up into Hill Country as well, which had some nice views. Stayed at the Westin on the Riverwalk, which is nice but wouldn't say a great place with kids.
There are some amazing caves somewhere in the hills where bats come out every night - and I mean like a ton of them. It’s one of those amazing things that has to be seen to be believed. Can’t remember name but sure if you google it’ll come up. Plus when you finish there’s a fierce burger restaurant up there.

I grew up in Dallas in the 1980s... San Antonio was my family's go-to weekend getaway. All the stuff you said is worth doing. Take them to Chris Madrid's for big sloppy burgers. Honestly if your kids are anything like mine, the hotel pool is going to be the only thing they care about anyhow ;)
