It sounds like this is management's problem to work on, not yours. You said it yourself - you do just fine when you don't have someone breathing down your neck. Your boss needs to learn to back off. But as we all know that's never going to happen, I guess the only thing you can do is keep proving to them that you don't need or benefit from the constant scrutiny. Figure out what they hyperfocus on and beat them to the punch on it. If that's prepping for the dinner rush, take ownership and get your area ready without them asking. These people never want to believe the restaurant can run without them sticking their nose in everything, but if you consistently work ahead and anticipate what they're going to ask before they ask it, hopefully they'll start to chill out a bit.
