That’s a nice question and it’s indeed true.
I just quit sap after having spent 15 years in sap labs.
There are many reasons why employees stick to sap.
Sap started its India operations in early 2000s so naturally you will see lot of people with that kind of experience . Since this a product company you can stay as IC without any issue.
Many folks join sap from service background and for them the difference in work culture and policies is night and day.
SAP is also becoming retirement company for many and they don’t want to switch as they are in comfort zone.
Majority work in niche areas and for them sap is best company to work in their domain. There are no better opportunities. Their skills may also be not up to date.
Sap has been doing good salary hikes until 2017 or so and after that it stopped doing big corrections. Now long term employees have started evaluating their market value especially after sap made pay scales transparent. I have started seeing lot of attrition as even service and consulting companies are paying better salaries.
I recently switched for a 100 percent hike .

I don't know much about SDC, they are more similar to consulting companies like Deloitte.
I would still rate SDC as better than other consulting companies in sap domain.

Currently the band at the service companies got increased due to pandemic. Also sap labs has increased the band for the new joiners. But for the old employees it is now giving single digits hike. Even this year they did so called market correction which was only 20% with a bad last year having 3% flat hike.
Due to these issues the services companies out there are also lucrative these days. That's why there is lot of iteration these days in sap labs. Old employees are also looking for change now and getting decent hikes.
